The Tea Squirrel Hojicha Muffin Recipe

Our recent appearance at Hyper Japan brought on an interesting request, what can I bake with Hojicha roasted green tea. Did you know tea is a great ingredient to cook/bake with and Hojicha is a Japanese delicacy that will surprise any tea drinker. It's got such a distinct taste smoky and earthy that it pairs with lots of other flavours. 

We went searching for tasty recipes to share with you and stopped at The Tea Squirrel popular blog that's filled with tasty options including a couple of recipes for these mochi muffins.

Hojicha mochi muffins with hojicha tahini drizzle

They are crispy on the outside but soft and chewy on the inside, a surprisingly addictive texture. Mochi is a sweet, chewy Japanese rice dough used in a lot of traditional Japanese confections. Mochi muffins and mochi-based Japanese confections have one thing in common: mochiko, also known as glutinous rice flour or sweet rice flour.

Recipe yields 12 regular muffins (2 1/2 inch diameter) + 4 large muffins (3 1/2 inch diameter)

These are the ingredients you'll need to get started:

1 stick (1/2 cup - 113 gr) unsalted butter
1 1/2 cups (350 ml) full-fat coconut milk (from a can)
1 can (1 1/4 cup - 300 ml) sweetened condensed milk
3 eggs, at room temperature
2+2 tbsp hojicha (roasted Japanese green tea), divided, or more to taste
1 lb (454 gr) mochiko flour (glutinous rice flour)
1 tbsp baking powder
1/2 cup (120 ml) milk at room temperature
a pinch of salt
sesame seeds for sprinkling

For the hojicha tahini drizzle:
1 tbsp tahini
2 teaspoons cocoa powder, unsweetened
1 teaspoon maple syrup
strongly brewed hojicha tea
